    Oolong Teas

    Ever wondered what kind of delicious tea the Chinese restaurants serve? It's called Oolong tea and it is a traditional Chinese type of tea that falls somewhere in between green tea and black tea in flavor.

    The four types of teas that come from the leaves of the camellia sinensis plant are green, black, oolong, and white.

    The word "oolong" in Chinese, means "black dragon" and when dried, the leaves have a black thread-like appearance. The many varieties of oolong tea all differ greatly in flavor.

    The flavor of Oolong tea depends on how long the tea leaves are given to ferment. The Oolong tea fermentation process is carefully stopped when the leaves are still 30% red and 70% green. The most critical part in the production of oolong tea is knowing exactly when to stop the partial oxidation.

    Because Oolong teas can have different degrees of oxidation, some are closer to black teas, while others resemble more of a green tea. A tea master grades the tea according to the flavor and unique characteristics of each batch at the final stage of processing. Then the tea is sorted, packaged and shipped.
